Hey, want some tail??
TBBQ has a whole assortment of alligator meat for your appetite.
Try the bulk assortment package which contains a variety of chunks throughout the beast and has been tenderized in one and five pound packages, This deal can be used for frying, sautéing or grinding, depending on your dish. Clear White is a chunkier cut for stewing, light smoking and recipes in which you would like to see your gator. Tenderloin is the most expensive as the word carries. This cut varies with the size of the snapper and is the choicest cut of this reptile. There is only one tenderloin per beast, so I hope you have deep pockets. Jimmy only kills a gator that can provide a full range of sellable product. A good head, great skin and no battle scars to degrade the hide.
Gotcha goin’?
Good....
I took first place in 2nd Annual Greater Gator Cookoff on 2000. The competition was awesome.
Gator Won-Ton, Gator Ravioli, Gator Chili; you name it. I entered with a recipe I developed based on my aloof tastes and what I would want to chew on. Orange-Brined, Mesquite Smoked, Alligator Tail Tenderloin with Alligator Sauce Piquant for dipping. Makes ya wonder, heh? I saw some great dishes going to the judges table and knew I was there to learn above all. When the CEO of Gatorland in Orlando started to name off the winners in the Individual Category from third place down, and I did not make third, I thought, “well, there is always next year”. But when he announced first place, starting with “Mesquite-Brinned...”, I went blank. I looked at my son (who was also floored), went for the stage and the rest is history as they say.
My smoked alligator tail is, as I said, smoked by Mrs. Peters.
They use Australian Pine which is abundant with great smoke flavor. I use the same award winning brining method to capture the same great round flavor. Tenderloin sizes vary, but your serving per pound will definitely be on your side of the scale.
Email me with an enquiry about ordering. To provide the freshest products to you, I smoke tenderloins to order. They are not cheep by no means. Smoked Alligator Tail Tenderloins will set you back $ 25.00 per pound with a minimum order of 2 pounds. Even at twenty-five bucks a pound, I don’t put a bunch of beer money in my pocket. Loss of weight from smoking and a stiff price at the slaughterhouse is just what it takes to do business. But wait until you try some!
You’ll be stealing TV’s and jacking up gas stations to support your craving for smoked gator. So email me today, let me know your intentions and I’ll smoke up some tenderloins for you directly...
HAVE YOU GOT A PIECE OF TAIL TODAY?
